Moose meatloaf sandwich, or “mooseloaf”, is a hearty wild-game twist on a comfort food classic that deserves a spot in every Alaska hunter’s recipe collection. Fire up the oven and give this one a try.

Ingredients:

Mooseloaf

  • 2 lbs ground moose burger (70% moose, 30% pork shoulder)
  • 1 large sweet yellow onion, diced
  • 4 cloves garlic, minced
  • 1/4 c fresh parsley, chopped
  • 2/3 c milk
  • 1 c panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 c Parmesan cheese
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp olive oil

Glaze

  • 1 c ketchup
  • 1/2 c barbecue sauce
  • 1/4 c yellow mustard

Sandwich Fixings

  • Bun of choice (I chose brioche for this recipe)
  • Lettuce (I used Romaine)
  • Tomato
  • Pickle

Moose Meatloaf Sandwich Directions

Step 1: Over medium heat in a sauté pan, cook the onion until caramelized in 1 tsp olive oil, about 8-10 minutes. At the 6-minute mark, add garlic. Take off heat and set aside to cool. Once cool, combine all the mooseloaf ingredients in a bowl; place in refrigerator for at least 4 hours to let flavors combine. I prefer to let it sit in the fridge overnight.

Step 2: Preheat the oven to 375ºF. I choose to cook my mooseloaf on a sheet pan. I form it into a rectangle about 2” thick, roughly 6” x 8”. Cover sheet pan in foil and add mooseloaf. Combine the glaze ingredients in a bowl and slather onto mooseloaf. Cook for 30 minutes. Once done, let mooseloaf rest for about 15 minutes before cutting.

Step 3: Choose your favorite bun, add lettuce, tomato, and pickle. Serve with French fries, potato salad, coleslaw, or chips. This recipe will make about 8 servings, so if you find yourself with leftovers, consider another meal where you serve the mooseloaf with mashed potatoes and a vegetable of your choice.
