BBQ Mooseballs
by Cristy Bishop
The smell of these wafting through the house when they are cooking brings everyone to the kitchen asking, “Is dinner ready yet?”
In addition to family dinner night, they make a great freeze-ahead dish, and they are always a well-received dish to bring to any get together.
Meatballs:
2 lbs. ground moose, caribou or
red game meat
1 can evaporated milk
1 cup oatmeal
1 cup cracker crumbs
2 eggs
1/4 cup finely chopped or grated onion
1/2 tsp. or more garlic powder
2 tsp. salt
1/2 tsp. pepper
2 tsp. chili powder
Mix and form meatballs. Cover baking sheet with wax paper and freeze (this will help meatballs keep their shape). I use a melon baller to grab the portion for each meatball, ensuring an even size for cooking time and presentation.
BBQ Sauce:
2 cups ketchup
1 cup brown sugar
1/4 cup finely-chopped onion
1/4 tsp. garlic powder
1/4 tsp. liquid smoke
Mix all sauce ingredients together. Layer meatballs in a baking dish and cover with sauce. Bake at 350 degrees until meatballs are done and sauce is bubbly (about 30 minutes).
